Winnow Chocolates, a Sydney-based chocolatier knows how to make and deliver authentic, couverture chocolate.  They use the traditional French technique of hand-tempering on marble to produce stunning artisan chocolates.  At the Karen Willis Holmes HQ, we got very excited when we found out they also do custom made chocolates for weddings! They use bespoke flavour combinations and chocolate designs, as well as offering tailor-made packages with your name, wedding date and personalised messages included. These incredible chocolates would make a perfect gift for your guests, bridal party or as part of a dessert table. 

They use the world’s finest ingredients with organic, fair-trade couverture chocolate. The base is flawlessly complemented with locally sourced fruits, nuts & spices. They source as many local ingredients as possible, supporting all of the amazing makers and producers Australia has to offer.

Let's start at the beginning. How did your business come about?

I really just fell into working with chocolate. Having left an office job, I was working part-time in a chocolate shop and the opportunity to train as a chocolatier arose. I couldn’t say no! Once I had started working with chocolate I fell in love with the process and decided to pursue starting my own business.

What inspires you? I’m inspired by a whole range of things including travel, interior design and architecture.

How do you start your day?

I try to start the day with some exercise outside and then a delicious healthy breakfast before heading into the studio.

What is your favorite thing about your job?

I really enjoy working with companies and couples in creating unique chocolates to be used as gifts at events and weddings. Helping to create a unique gift which not only looks beautiful but tastes delicious and will be remembered, is a really fun and rewarding aspect of my job.

What is your advice to couples planning a wedding? Work out what is most important to you for the day and then choose fantastic vendors to help make your vision a reality.

Favorite city? I’m not sure that I have a favourite! I love living in Sydney but also really enjoy traveling.  Memorable places I’d love to return to include Paris, Marrakech and Florence.

Best way to spend $50? A catch up with friends.
